Why I Decided to Roast a Chicken & Other Weekend Stuff

Happy Monday! This weekend went by way too fast. Does anyone else agree? Even though it flew by, I feel like we got so much done which is great and it is always good to start off the week feeling like I’m ahead.

Friday… started with a tough bootcamp at Mission followed by an incredible avocado, egg white & spinach breakfast sandwich from Panera. I was really craving avocado and this was exactly what I was looking for!

Friday night… we had a delicious dinner at Bears with Robbie and Jenna followed by drinks to celebrate St. Patty’s Day. It was a fun night out and I’m glad we were able to spend some quality time with them ๐Ÿ™‚

Saturday… we ran some errands during the morning and early afternoon including a vet visit for Charlie which was not a good experience at all and we will be changing vets ASAP.

Saturday night… my beloved East Hartford Hornets were playing in the state championship for basketball at Mohegan Sun so we decided to make a night of it. We had dinner at Chick-fil-a (don’t judge, it was SO delicious) and drinks along with a bit of gambling before the game. We ended up losing the game but it was so exciting to see my favorite team play in the championship and I’m so proud of them and the huge outpouring of support from our town.

Sunday… I planned on getting up for bootcamp but we didn’t get to bed until almost 1:00am the night before so an early morning was not in the cards for me. I slept in a little bit and ended up going to Cardio Express to run on the treadmill. I completed four miles of jogging/walking which I don’t think I’ve ever done before and I’m feeling it this morning!

Sunday afternoon… I had the urge to make a big Sunday dinner that would provide leftovers for lunch for the week. I scoured the ads and found that whole chickens were on sale and decided to roast one using Ina Garten’s famous recipe. I had never actually roasted a whole chicken before so I was a bit intimidated but the recipe was SO easy and it was nice to spend a few hours cooking in the kitchen while Dan napped (he was up at 5:00am for drill after our late night). I also made this triple chocolate banana bread which was SO good and I honestly can’t stand regular banana bread so I was happy with this chocolately version.

Sunday night… we devoured the chicken with a side of mashed cauliflower and the veggies that I cooked with the chicken along with a bottle of Chardonnay which paired so well with the chicken. We stayed up a little too late watching March Madness so I’m quite tired today but nothing that a cup (or two) of coffee can’t fix.

Hi guys! I know I’ve been absent this past week or so but as I’m sure you guys understand, the holidays have been crazy! There has been zero time to do anything (you know, clean, cook, etc) especially for sitting down to write. Since there is so much to recap, I’m going to do this as a semi-wordless post with a few details thrown in so you guys can kind of visually experience my hectic holidays because pictures speak much louder than words.

The very next day, we traveled to Rhode Island to celebrate Hanukkah and it was so great to visit with Dan’s family and eat some of my favorite foods, including brisket and ALL the cheese.

That brie was amazing and the other cheese was a cranberry cheese from Trader Joes which was terrific.

Christmas Eve and Christmas Day were quite hectic but we were able to spend time with so many wonderful people that it was all worth it.

To end Christmas weekend, we took my Dad to the UConn vs. Central basketball game as his Christmas present. We also had lunch at Bear’s before and to say that was amazing kind of goes without saying at this point ๐Ÿ˜‰

Marvelous Monday!

I can’t believe how quickly this weekend flew by! That always seems to be the case on the weekends when I don’t have to work since they are filled with ALL the fun. This weekend was no exception as it was packed with great food, fun, and friends!

Marvelous is… my UConn Huskies making it to the Final Four! Friday and Sunday’s games were clearly the highlight of my weekend. For dinner Friday night we had some leftover pizza with a salad that we ordered from Giovanni’s. A couple of our friends also came over and we watched UConn defeat Iowa State and then we headed over to the Diamond for some drinks. The next game was on Sunday afternoon and since we had dinner plans with Dan’s parents later, we invited them over to watch the game. The game was exciting and I am beyond excited that my Huskies have made it to the Final Four!

Marvelous is… Alex’s Lia Sophia party on Saturday night! Alex hosted the party at her mom’s house in Tolland, CT so I drove myself and a few of my girlfriends up there (about a 30 min drive). I knew it would be so much fun since Alex throws the BEST parties and I love spending time with her mom. Our Lia Sophia advisor Denise is becoming a great friend to us since we have had SO many parties (and more to come!). I ordered two pairs of earrings and a necklace that I have had my eye on for a while now. The food was out of this world and I definitely ate way too much. I brought Tastefully Simple’s Garlic Garlic dip and others brought appetizers like Beer Dip, Skinny Taco Dip, cheese pinwheels, and so much other stuff that I can’t even remember! It was a great night and so much fun to spend time with my ladies.

Marvelous is… spending some quality time with Dan during the day on Saturday. We both woke up pretty early and decided to get inย a quick Saturday morning workout. We actually went to his gymย and he added me to his membership (2 people for $10/month!) so now I belong to my gym (Cardio Express) as well as his gym. His gym is right around the corner from us and that will hopefully help to motivate me to go in the morning before work. I love my gym but its farther away and I can’t always get there when I want. After the gym we had plans to finally go see the movie Divergent. This movie was much better than I expected and it followed the book completely. Dan enjoyed it as well and it was just really good to get some time together out and about since he is starting a class for the fire department this week so that means a lot less time together for the next couple of months.
