Quick Little Catch Up

Happy Wednesday everyone! There has been quite a bit going on, as per usual so I’m going to keep today’s post short and sweet. It’s just a little bit of catching up on this past weekend and the start of the week as well. As busy as we are, we are lucky to have such great parties and events to attend so I’m not complaining at all!

Friday evening turned out to be a little bit stressful and a nice dinner with Dan and Melissa was just the cure for that. We went to a new-to-us Japanese restaurant in Wethersfield called Edoichi Sushi & Hibachi Steak House. We enjoyed a yummy scorpion bowl and some amazing sushi which was some of the best I had ever had! It was a nice, relaxing evening which was much needed.

Alex’s birthday party was Saturday evening and as always, her party was filled with great food, delicious drinks, and so much fun with some of our best friends. I didn’t really take any pictures because I was really immersing myself in the night and I will take that as a win!

Sunday was spent celebrating our good friend Dan’s birthday. We all carpooled and headed up to the Seekonk Speedway in Seekonk, Massachusetts for a Thrill Show which included a variety of different races, demolition derbies, and even some monster trucks. Since we always enjoy the demolition derby at the Hebron Fair, this was a lot of fun and on a much bigger scale than we are used to. We came home exhausted that night but it was well worth it!

I ended up working from home yesterday since we had a meeting with our Reverend early in the evening to finalize some wedding details. I took the opportunity of working from home and made myself a delicious lunch that I normally would not have had time to make on a normal day. I used my new Nutribullet and blended up some spinach, peach slices, apple slices, cucumber, and raspberries for an amazing smoothie and paired it with the rest of the apple and peach slices for a healthy and surprisingly filling lunch. I also took the time to prepare dinner ahead of time, which was Skinnytaste’s Santa Fe Chicken. It was SO easy and I just basically dumped all of the ingredients into the crock pot and cooked on low for 10 hours. We used the results to make chicken tacos as a celebration of Taco Tuesday! It was so delicious and I will definitely be making it again.

Five Things Friday: The Little Things

Happy Friday guys! Two posts in one week feels like quite an accomplishment right now with all of the craziness that is my life right now. It’s definitely the little things that get me these days (hence the title of this post). I wanted to share a few random things with you guys to kind of update you on what I’ve been up to lately.

  • I love naan pizza. It is something that I have seen on a few other blogs and since we love pizza (I mean, who doesn’t?) According to Wikipedia, naan is a leavened flatbread that is mainly found in Asia. It can be used in many different ways but the way that most Americans use it is for pizza. Last night we used the garlic version made by Stonefire and topped it with some jarred pizza sauce, fresh tomato slices, fresh mozzarella, and some minced garlic. It was incredible and so easy! We just popped it in the oven at 350 for about 10 mins and it was all done! I highly recommend it for those who are looking for a quick and delicious meal.

  • I’m also really loving Old Navy lately. I would love to be able to shop at cute little local boutiques but that is just not in the budget these days. I have found so many cute and affordable items there lately. I mean a TON of stuff. I plan on going back this weekend as I may or may not have several amazing coupons burning a hole in my wallet 🙂

  • This Saturday we are looking forward to some pre-wedding festivities for our good friends Kaitlin and Quentin. Kaitlin’s bridal shower is on Saturday and Quentin’s stag party is Saturday evening so we are both heading out to the Litchfield area to celebrate. Their wedding is just about one month before ours! I could not be happier for these two as they are absolutely adorable together.

  • I would really love to fit in a couple of good workouts this weekend, including hopefully a hike. We went on a hike a couple of weekends ago with our friend Natasha and her sister’s adorable puppy Flynn. It was so nice to be able to get some fresh air and just relax. I could definitely use a little bit of that relaxation right about now.

  • We are hopefully making our first trip of this year to the Coventry Regional Farmer’s Market! It sounds like this may be the last year for this particular market so I really want to try and go as much as possible. I already saw the list of what most of the vendors will be bringing since the market sends out a weekly newsletter and I am so looking forward to getting some goodies. I’m hoping to pick up some of my favorite Pure Love granola, strawberries, duck eggs, and some pork to stock in our freezer. Wish me luck!

WIAW: A Day in the Eats

Happy hump day! I’m super happy that it’s Wednesday because it’s practically my Friday. I have jury duty tomorrow which I’m actually excited about (I’m weird) and then I have Friday off. I figured I would share yesterday’s meals with you guys so you can see what I’ve been eating lately.

I eat the same breakfast every single day and surprisingly I’m not bored yet. It’s always a Yoplait Greek yogurt with whatever flavor of Pure Love granola that I have open that particular week. Yesterday it was a vanilla yogurt with gingerbread granola which was a very tasty combo that I will definitely be eating again.

In my transition over to my new job I also had to change the timing of my snacks and lunch. I usually bring the same snacks each day which include a bag of baby carrots and sliced cucumbers, a bag with one serving of Goldfish, and a banana. I ate these yesterday at around 11:00 but I was still starving for lunch by 12:30.

My lunches do tend to vary although the past two weeks I have stuck with sauteed chicken breast, black beans, and brown rice. It really fills me up and since I buy the rice that has some spices in it, I don’t find it to be flavorless or boring as rice usually is.

Last night’s dinner was a little out of the norm since we ended up going to Giovanni’s very last minute with our friend Sarah before she and Dan went to a fire department meeting. I had the most delicious honey BBQ chicken salad which I will definitely be ordering again.

After that insanely huge salad, I didn’t anticipate that I would be able to work out on such a full stomach. But I went home and let my stomach settle for a bit and got right to it! I did about 30 minutes of Jillian Michael’s Banish Fat Boost Metabolism and didn’t even get a cramp until the tail end which is when I knew that it was time to stop 🙂 I’m proud of myself for getting my exercise in even though I had a big dinner.

Five Things Friday: Crazed

Happy FriYAY guys! I was pretty crazed this week due to the fact that it was my first full week out of training at my new job and although it went VERY well, I was pretty stressed so when I got home most evenings, I just really didn’t feel like writing. I spent most evenings working out and then vegging out on the couch with my DVR and a glass of wine. That being said, I have a few random things to share with you guys.

1. We have enjoyed some fabulous meals this past week. I have to say that my new hours really make it a lot easier to make dinner together and eat at a normal time. Sunday night, we made a quick trip to Whole Foods and picked up some yummy shrimp cocktail and cheese and crackers to enjoy while watching the Oscars. Tuesday evening I was way too tired to even think about dinner so we enjoyed an impromptu date night at Aroy Aroy which is a new-to-us Japanese/Thai restaurant in South Glastonbury. The food was a little pricey but it definitely hit the spot. Last night we had one of my favorites, BLTs with added avocado and an absurd amount of sweet potato fries on the side. I swear I could eat that meal every single night, it was so yummy!

2. I have finally decided to try out Stitchfix and I am very excited. I have been reading so many other blogs and have seen so many success stories with it that I decided that I had to try it for myself. Plus, I’m in need of some new spring clothes and haven’t really been in the mood to shop lately so this seems like the perfect solution! For those who are wondering exactly what Stitchfix is; it’s a styling service in which you fill out a style profile on their website, pay a $20 styling fee and then your styling profile is assigned to a personal stylist who creates a fashion “fix” of five items that are sent to you in the mail based on what you have indicated in your profile. Mine is scheduled to arrive on March 5th so I will definitely be posting about my first experience!

3. We are starting (and hopefully finishing) our save-the-dates this weekend. Finding all of the addresses has been my biggest source of anxiety in the wedding planning process thus far and I will be breathing a huge sigh of relief once we get these things out in the mail. We are also hopefully going to add more items to our registry this weekend too which would be another check off the list. Shout out to my maid of honor Alex and bridesmaid Natasha for picking their gorgeous dresses this past weekend so that is another important thing that is all done which is great.

4. Jillian Michaels is becoming my new best friend. Although I don’t necessarily agree with her methods on The Biggest Loser, I am absolutely without a doubt loving her workout videos. There are so many to choose from which makes it impossible for me to be bored and I feel like I’m working so many different muscles each day. My favorites right now are the 30 Day Shred, Kickboxing Fastfix, and the newer-to-me Trouble Zones. Basically this means that I love all of the ones which incorporate weights into the workout because I feel that those are what is changing my body the fastest. I am honestly loving the strength I have been feeling within my core and just throughout my body as a whole. I still feel like I have a lot of work to do but these videos are definitely helping me to get where I want to be.

5. My goal of trying out one new recipe each week has been quite successful. This past Sunday I had Pinch of Yum’s Crockpot Queso Chicken Chili cooking all day long and let me tell you, it was amazing. The leftovers the next night were perfect to scoop up with some wheat thins and tortilla chips would have been even better. I’m not sure I’m making anything new this coming week but every single evening is pretty busy so I don’t think I will have much time to cook.

What I’ve Been Eating Lately

Happy Friday! I know I have seriously been lacking in the posting department lately, particularly regarding the meals I have been eating. I especially realized this today when I was going through some pictures on my phone trying to find things to delete to free up some space (ugh) and I found all of these wonderful meals that I have enjoyed lately and I figured I would just share them with you in a big photo (and word) dump.

Monday’s dinner:

We did a quick Whole Foods run and picked up some Brussels and some of their buffalo chicken salad (thank you Cait for helping me to discover this gem!) and we tossed that together with some of our favorite new buffalo sauce and some fabulous slab bacon from Bogners. The result was nothing short of amazing and I see this as a frequent dinner for us.

Since it was my last Tuesday off, I decided to make a big yummy breakfast. I scrambled three farm fresh eggs that Dan’s sister gave to us with some spinach, cheese, and then topped off with avocado and salsa. It definitely hit the spot after a tough workout. Obviously I was hungry about an hour later so I toasted an Eggo’s blueberry waffle and topped it with some peanut butter, raspberry spread, and banana slices. I could eat the peanut butter/banana combo every single day, I swear.

Tuesday’s dinner:

We were supposed to eat dinner at home but after some indoor rock-climbing (my first time and I loved it!), I was too tired to cook and was eager to take advantage of CT Restaurant Week’s Taste of Hartford. So myself, Dan, Robbie, Jenna, Kevin and Andrew all decided to go to the Chowder Pot in Hartford and basically had a fabulous four course meal for $20.15. It was wonderful and I left satisfied but not too full.

Wednesday’s dinner:

Since we didn’t eat dinner at home on Tuesday, that planned dinner was pushed to Wednesday. We had Trader Joe’s turkey burgers topped with cheese, a fried egg, and avocado. I had been craving this meal for such a long time and it definitely hit the spot.

Thursday’s dinner:

We usually grab a quick dinner out on Thursdays since we use that night to run a lot of errands so we decided on Hot Table for dinner. It’s a panini restaurant kind of like Subway where you can make your own or choose from the options they have on the menu. It was Dan’s first time there and he loved it. We both had the Southwest Chicken panini and it was amazing.

Whew, that was quite a lot of food and now I’m starving! Today is my last day with my whole team (I’m working tomorrow) in my current job and although I’m sad to leave such great people (and the BEST manager), I am very excited to learn something new! I hope you all have a great weekend!

WIAW: Bertucci’s

Happy hump day all! Today I’m sharing with you guys a fabulous meal that Dan and I had this past Saturday night at our local Bertucci’s. I do want to preface this by saying that unlike a lot of people, I have only been to Bertucci’s a handful of times but it is quickly becoming one of my favorite chain restaurants. I usually like to stick to local restaurants but their food has been outstanding in the few times that I have eaten there.

I had just gotten out of work and I was absolutely starving. I had literally been dreaming about their warm, fresh rolls all day long. It was pretty busy so we decided to sit at a table in the bar and the service was impeccable. I quickly ordered a glass of the house red which was a Placido Primavera Sangiovese and it was very smooth and not too heavy. We were promptly served a basket of rolls with olive oil for dipping. I was basically in carb heaven at this point and there was no stopping me.

Due to my insane hunger, I decided that we would start with the Margherita flatbread which was so yummy and Dan noted that the basil on top was very fresh and had great flavor.

For my meal, I had decided hours before that I would get the unlimited soup and salad because I had been dying to try minestrone soup. I know, you guys are thinking, how has she not had minestrone soup before? I’m not really a soup person but lately I felt like someone was ordering it every time we have been out to dinner so I had to try it. The verdict? I’m still not a huge fan of soup but it was very tasty and filling. I finished my whole bowl of soup and I had two servings of the salad which had the most amazing house dressing that I wish I could replicate at home.

Dan chose the spinach, goat cheese, and candied walnut salad with salmon as his protein instead of shrimp. I knew he would absolutely love this salad because I had ordered it during a previous visit and I was SO impressed. He gave me a few amazing bites and I do have to say that the salmon gave my usual favorite of shrimp a run for it’s money as a salad protein. He loved the salad just as much as I did and I know he will be ordering it again.

We had a wonderful experience at Bertucci’s and I know we will be back again soon. We noticed that they offer an amazing happy hour with $3 drinks and half price appetizers which we can’t wait to try!

Five Things Friday: Christmas Crazy!

Happy Friday everyone! I can’t believe this will be my only post for this week but things have been so busy with Christmas shopping and ALL of the holiday plans. Hopefully next week will allow for more time for blogging.

1. We got our Christmas tree on Sunday afternoon from Cavanna’s farm in Glastonbury. I’m so glad we were able to cut down our own tree so that it will hopefully stay fresh for much longer than usual. We decorated it that evening just in time for Dan’s parents to come over for dinner 🙂

2. I am just a couple of small gifts away from being done with my Christmas shopping! Although it feels like I keep adding things to my list, I think I will finally be done by early next week. I made a fabulous trip to Hobby Lobby and Christmas Tree Shop on Tuesday with Jenna followed by a yummy dinner at Plaza Azteca in Manchester. I enjoyed a chicken quesadilla with the works and a margarita that absolutely hit the spot.

3. I wasn’t able to work out as much as I would have liked to this week. With the holiday craziness going on, I was only able to work out Monday, Wednesday and Thursday evenings. I still feel like I’m making good progress and I’m seeing the changes in my body little by little (baby steps and all that jazz).

4. I FINALLY found my ugly Christmas sweater. I really find it more adorable than ugly but I think it fits the criteria. I bought it at Windsor in Buckland Mall while out shopping with Jenna. I cannot wait to wear it to my work Christmas gathering and our annual Christmas party with our friends.

5. I’m pretty sure that Bears Smokehouse Barbeque owns my soul. We went there last Saturday for dinner and then again last night for dinner with Kevin. I can’t get enough and I never even used to like barbeque. My usual meal of choice has been the Super Spud which is a baked potato topped with mac and cheese, pulled pork (or any other meat of choice), bacon, green onion, red onion, and sour cream. It is most definitely a cheat meal but it’s SO worth it. Needless to say, I am VERY excited to have my leftovers for lunch today.
