Monday Coffee Date # 2

Happy Monday! I haven’t done one of these in quite a while and my thoughts are pretty random today so I figured it was the perfect day for a coffee date! I also have coffee on the brain since I decided to buy a big bag of the Pecan Turtle coffee from my favorite spot, Daybreak, and last night we brewed a big batch of iced coffee for the week. I hope you all had a great weekend and that you had some sunshine for at least part of it like we did.

If we were having a coffee date, I would tell you… grilling season has officially begun and I’m loving it! We had cheeseburgers last weekend and steak on another night last week. I feel like I’ve been in somewhat of a meal planning rut and being able to grill again will definitely help get me out of that.

If we were having a coffee date, I would tell you… sunshine is everything to me right now. As corny as it sounds, I am just loving the beautiful days when we have them. Saturday was kind of gloomy but we still spent it outside at Olde Burnside Brewery with a group of friends followed by dinner and a movie at our house. It was a perfect day!

This is most definitely true.

If we were having a coffee date, I would tell you… active rest days are my jam. I made it to boot camp four times last week and I was feeling a bit tired and in need of rest. I took Saturday completely off and yesterday I thought about going to boot camp but I decided to go for a long walk around the center of town. It was just what I needed and I feel very well rested today but not like I spent all weekend lounging around. I also enjoyed my first homemade smoothie of the season which was refreshing and fueled my long walk well.

If we were having a coffee date, I would tell you… I do not have a green thumb but I’m thankful that my husband does 🙂 A month or so ago, I planted a bunch of seeds indoors and yesterday, Dan transplanted them outside. I helped with the cleanup of some of the bushes and did some raking but he knew the best way to plant the plants themselves. Thanks hubby!

If we were having a coffee date, I would tell you… I killed it on the grocery shopping front this week. I had a bunch of coupons and there were some great deals. I usually don’t buy much meat as it can get expensive but with such good deals, I was able to stock up on a bunch of different things. I rewarded myself with a sub from Subway for which I also had a coupon! #winning

Wordless Wednesday: The Good Life

Happy Wednesday! I hope your week is going well, or at least not as gloomy as ours here in CT 😉 They said on the radio this morning that it’s been cloudy/rainy for five days straight but the sun is finally shining today and it is wonderful. I haven’t done a wordless post in a while so I figured I would share some snaps from the past week or so. There has been lots of good food, drinks and even more laughter and fun with friends.

Well that has been life lately for us and it will just continue to get busier! We have the fire department awards banquet this weekend and I ended up renting a dress from Rent The Runway because I have zero time (or desire) to go shopping but I wanted to wear something new (or new to me!). Five Things Friday: Puppy, Superbowl, and Snow

Happy Friday! This week has sure been a weird one, with all of the weather and everything else going on in the world (and in our lives). I have lots to share with you today and I haven’t done a post like this in forever so here goes nothing.

  • Let’s start with the biggest news: we adopted a puppy! It was totally unexpected hence why I didn’t mention anything on here before. We had known we wanted to get one in the near future, likely spring so the weather would be a bit better. We saw on Facebook that a local rescue organization, Pack Leaders, would be at Petsmart with their dogs available for adoption this past Saturday. We decided to stop by and fell absolutely in love with an 8 month old Plott Hound/Whippet mix named Forrest. Long story short, we ended up adopting him that day and changed his name to Charlie. He is fitting in well with our family (as in the cats are tolerating him currently) and I’m sure I will be sharing plenty of pictures of him here.

  • With all of the puppy craziness, we were still able to host our small Superbowl gathering that we have each year. A few of our close friends came over and we ate the night away and also celebrated the Pats awesome comeback and win (YAY). The best treats of the night were provided by our favorite local bakery, Hartford Baking Company, in West Hartford. They provided us with a fantastic bread bowl and some pretzel baguettes that we sliced up for dipping as well. I absolutely love supporting local businesses and I encourage visiting Hartford Baking Company ASAP as their sandwiches, pastries, and coffee are also amazing and that bread is just everything.

  • Winter has finally arrived and I know I am one of the few that is SO happy about it. I love the snow and the cozy feeling of being wrapped up in blankets while the snow falls outside. We got around 18 inches last night which was definitely our biggest storm of the season.
  • With the snow comes my urge to cook all the things. I made chili for super bowl which we enjoyed leftovers of all week long. I took Monday off and decided to meal prep some chicken pesto pasta for lunch for the week. I used a combo of veggie and gluten free pasta along with almost a whole jar of pesto and a couple of sauteed chicken breasts. I plan on making this again for this coming week so I will try to snap some pics and share the recipe as I kind of made it up as I went along. I also made Chrissy Teigen’s chicken noodle soup last night which was just what the hubby needed as he was feeling a bit under the weather when he got home from plowing.

  • We have some fun plans for this weekend and I’m excited to get out as I feel like I’ve been stuck in the house due to the snow. We are doing some early Valentine’s Day celebrating with our friends Robbie and Jenna and heading to some wineries out in the Litchfield area which has become an annual tradition for the four of us. Sunday is a much needed girls breakfast with some of my favorite ladies.

Quick Christmas (and New Years) Recap

I hope you all had a fabulous holiday! I really took the time to immerse myself in the spirit of the season which felt fantastic because it is so easy to get caught up in the busyness of it all. As I had mentioned, I had last week off and unfortunately I spent a couple of days sick on the couch with an awful cold. It was nice to have a reason to relax and we still fit in so much great food and fun with friends and family. I figured it would just be best to let the pictures do the talking.

We kicked things off on the 22nd with “lasagna night” at our house where the lovely (and talented) Natasha taught me how to make her amazing lasagna. Lots of laughs (and wine) were had that evening 😉

Christmas Eve morning began with a new tradition of preparing eggs benedict for brunch followed by the not so new tradition of making deviled eggs to enjoy later that evening at Grandma’s house.

As many of you may know, Christmas Eve is probably my favorite day of the year as it is filled with so many traditions and we get to see lots of family and friends!

Christmas Day we opened presents at allll the places and enjoyed a delicious roast at Grandma’s. Dan received reindeer footie pjs from me for Christmas and he wore them for most of the day. We had Chinese food at my sister in law’s house with Dan’s family (another tradition) and ended the night with many drinks with Dan’s half sister and half brother. It was a packed agenda but I enjoy it so much every year.

The rest of the week consisted of Dan, my Dad and some of our friends installing a new back door and screen door for us which I absolutely love. We also spent Thursday and Friday in Newport which I will recap in another post. Friday evening was spent at Dan’s aunt and uncle’s home for Hanukkah which was a lot of fun.

New Years Eve was spent at Dave and Melissa’s house and there was lots of silliness and drinks (goes without saying).

We ended our vacation on Monday evening with this veggie and chicken detox soup. I have been basically inhaling the veggies the past couple of days as my body is craving them after eating a lot of heavy foods and lots of wine during my vacation.

Thanksgiving Weekend Recap

Happy Wednesday! What a crazy week back at work it has been, but I can’t believe it’s already almost halfway done! I’m definitely reveling in my Christmas glory right now and soaking up every single second of holiday cheer. I figured I would do a brief “sentence per picture” type of recap to catch up on what we did this past weekend.

Wednesday night consisted of lots of wine and laughter with the ladies and gents.

We actually took the time out to make breakfast on Sunday morning! Well it was almost noon but brunch is just as good 😉

I used up our turkey leftovers to make some turkey and corn chowder on Sunday night. Last night I also made my first attempt at turkey pot pie and according to the hubby, it was a hit!

Monday Coffee Date #1

Happy Monday! Since it’s been a while since my last post, I figured I would mix things up a little bit and try something new. Every few weeks I would like to share some random thoughts in the form of a “coffee date” and say what I would say to you guys if we were having coffee in person.

If we were having a coffee date I would tell you… our kitchen is (95%) done! We finished a couple of weeks ago, literally minutes before we had our family housewarming party. It feels so great to have a warm, cozy kitchen to cook in and I have definitely been spending a lot of time in there. I will share a full update soon with lots of pictures (once I have the time to take them!).

If we were having a coffee date I would tell you… we have been cooking up a storm and I’m loving all of the fall recipes. I made chicken noodle soup last night which was perfect as I am coming down with the beginnings of a cold. Some other meals have included: spaghetti squash and turkey meatballs, tacos, and Caitlin’s Bacon, Eggs and Brussels bowl which is one of our absolute favorites.

If we were having a coffee date I would tell you… farmers markets, bonfires, and all of the fall things have my heart right now. I’m squeezing the life out of fall right now and trying to fit in as much as I can. We went to a beautiful wedding this past Friday at our friend’s family’s amazing barn (congrats Kevin and Caitlin!) and a charity event there the next night as well. Both evenings concluded with a bonfire which was so much fun! Yesterday we were able to make it out to the Coventry Farmers Market which is my absolute favorite Sunday activity.

If we were having a coffee date I would tell you… we have been so busy and sometimes it has been hard to keep up with life. I’m so thankful for the times that we get to spend with friends and family although sometimes it is easy to get run down and fall behind on things like cleaning and meal prepping. I’m trying to turn that around this week and be as productive as possible so I can relax this weekend when we have our friends housewarming party.

Labor Day Weekend 2016

Happy Tuesday! I felt like certain parts of this weekend flew by and others went by nice and slow. I loved everything about this past weekend, but especially the time we were able to spend with our close friends and family. I feel like we spent quality time with SO many different people and that was really nice.

As I had mentioned, I took Friday off and that meant I was able to sleep in a bit and write this Stitch Fix post and prepare our dinner. I was planning on going to boot camp but once my alarm went off, I was just not feeling it so I used it as a rest day. I spent the afternoon doing some shopping and I enjoyed a delicious Cobb salad from Panera outside on their patio. I came home and unloaded my goodies and spent a good couple of hours lounging in our sun room. It was a perfect, leisurely start to the holiday weekend. That evening, we enjoyed some crock-pot turkey chili along with a fabulous red wine before heading to the Diamond.

Saturday morning was spent at the farmer’s market where I was able to spend some time with my aunt and cousins while Dan and my Dad replaced the brakes on our Explorer (thanks guys!). The majority of Saturday afternoon was spent at a celebration of life for our best friend Tyler’s mom who had recently passed away. It was a beautiful celebration and it was wonderful to see so many people there supporting him and his family. Saturday evening we were a bit hungry so we decided to head to Birch Hill Tavern for some apps and we devoured their Sea Scallop and Arugula dip which was INSANE and I want more of that right now. We ended the evening by falling asleep at 9:00 on the couch watching the Harry Potter marathon. We are super cool.

Sunday was the absolute definition of a Sunday Funday. We went to Gouveia Vineyards with Alex and Natasha and then enjoyed a dinner back at our house of chicken, steak, and shrimp kabobs with sides of macaroni and potato salad. I took zero pictures of our dinner but it was delicious. I wish every single Sunday could be filled with that much laughter and love.

Monday was literally spent on the couch, I think for something like 12 hours. Robbie and Jenna came over, and later so did Morgan and Kody, and we watched four Lifetime movies and ordered Chinese food for dinner. It was the absolute laziest day we have had since we bought our house and it was perfection.

It was a great weekend and I’m happy that we have a short week so I can get back to more fun like that. Somehow, I’m still totally exhausted but I wouldn’t have it any other way. I hope you all have a fabulous week ahead!
