Labor Day Weekend 2016

6 Sep

Happy Tuesday! I felt like certain parts of this weekend flew by and others went by nice and slow. I loved everything about this past weekend, but especially the time we were able to spend with our close friends and family. I feel like we spent quality time with SO many different people and that was really nice.

As I had mentioned, I took Friday off and that meant I was able to sleep in a bit and write this Stitch Fix post and prepare our dinner. I was planning on going to boot camp but once my alarm went off, I was just not feeling it so I used it as a rest day. I spent the afternoon doing some shopping and I enjoyed a delicious Cobb salad from Panera outside on their patio. I came home and unloaded my goodies and spent a good couple of hours lounging in our sun room. It was a perfect, leisurely start to the holiday weekend. That evening, we enjoyed some crock-pot turkey chili along with a fabulous red wine before heading to the Diamond.

Saturday morning was spent at the farmer’s market where I was able to spend some time with my aunt and cousins while Dan and my Dad replaced the brakes on our Explorer (thanks guys!). The majority of Saturday afternoon was spent at a celebration of life for our best friend Tyler’s mom who had recently passed away. It was a beautiful celebration and it was wonderful to see so many people there supporting him and his family. Saturday evening we were a bit hungry so we decided to head to Birch Hill Tavern for some apps and we devoured their Sea Scallop and Arugula dip which was INSANE and I want more of that right now. We ended the evening by falling asleep at 9:00 on the couch watching the Harry Potter marathon. We are super cool.

Sunday was the absolute definition of a Sunday Funday. We went to Gouveia Vineyards with Alex and Natasha and then enjoyed a dinner back at our house of chicken, steak, and shrimp kabobs with sides of macaroni and potato salad. I took zero pictures of our dinner but it was delicious. I wish every single Sunday could be filled with that much laughter and love.

Monday was literally spent on the couch, I think for something like 12 hours. Robbie and Jenna came over, and later so did Morgan and Kody, and we watched four Lifetime movies and ordered Chinese food for dinner. It was the absolute laziest day we have had since we bought our house and it was perfection.

It was a great weekend and I’m happy that we have a short week so I can get back to more fun like that. Somehow, I’m still totally exhausted but I wouldn’t have it any other way. I hope you all have a fabulous week ahead!

Labor Day Weekend Recap

3 Sep

I am SO happy it’s already Wednesday! Today is one of my three days of work this week, due to having a four day weekend and then I have this coming Saturday off for Natasha and Brian’s wedding (YAY!!). This Labor Day weekend was truly one of the best and I spent so much fabulous time with Dan and our friends.

Friday night:

I left work early as planned and met up with Dan and my family to tailgate for the UConn vs. BYU game. We ordered pizza (and a salad for me) from Giovanni’s and it was so much fun to just hang out and relax. I definitely enjoyed some wine before and during the game (it was a terrible game) and we bounced around between our seats and visiting with my family and with Dan’s dad who was also in attendance. We left the game a little early and headed to the Diamond where more fun times were had 🙂

It was a perfect night!

Saturday:

I made plans earlier in the week to go to a vineyard with Dan and Carlee (one of my bridesmaids and oldest friends). We decided on Bishop’s Orchard Winery in Guilford, CT which Dan and I had previously sampled wine from at the CT Wine Fest. It was about an hour long drive but it was our first mini road-trip in our new (used) Ford Explorer so we were excited to go. The wine was terrific and it was interesting to learn that none of their wines are made with grapes but rather other fruits like apples, pears, peaches, raspberries, etc. My favorite was the Apple Raspberry Blush, of which I obviously took a bottle of home for our collection.

Saturday evening:

Saturday night was Brian’s stag and all of the guys were attending so we decided to have a girls night. Natasha, Alex, Melissa, Jenna, Isabel, her son Levi, and I all went to Bricco Trattoria for dinner. It was so delicious and also great to have a night out with the ladies. After dinner, we hung out at my apartment and watched some TV and enjoyed quite a bit of wine (thanks Denise!).

Levi was definitely the best part of the night :)

Sunday:

We didn’t really do too much on Sunday but I did finally get a dress for Brian and Natasha’s wedding. I’m going to keep it a surprise for now but I will definitely share pics from the wedding after this weekend. We also had a delicious lobster dinner complete with baked potatoes, stuffed clams, and corn on the cob at Dan’s parents house (boy are we spoiled!).

Monday:

I woke up on Monday ready for a good workout since I had two rest days in a row. I did a quick kickboxing workout on the Xbox and then convinced Dan to finally go for that hike I’ve been thinking about forever. We completed a little over two miles and then we decided to hit up Dondero Orchards in South Glastonbury to do some blueberry picking. They were serving blueberry fritters which neither of us had tried before so we obviously got those also. They were AMAZING. We came home to shower and prepared dinner as we had two of our favorite people, Erica and Jon, coming over for dinner. We made homemade burrito bowls (similar to Chipotle/Moes style) filled to the brim with so many toppings. They were a big hit and Dan keeps asking why we haven’t made them sooner. Dan used the blueberries that we had picked earlier in the day and made a delicious blueberry crisp. It was a perfect dinner 🙂

We actually hiked out to the place where we got engaged!

I recommend that you try blueberry fritters immediately. They will complete your life.

I had yesterday off too and I did absolutely nothing but run a few errands and relax so nothing too interesting there. I hope everyone has a great week!

Five Things Friday: Long Weekend

29 Aug

Happy happy Friday! For once this weekend felt like it went by pretty quickly which I’m sure means that the weekend is bound to go by even faster. Oh well, it was a good week and I feel like I was very productive, both at work and at home, which is always a good thing.

1. I have a four day weekend which is honestly the most amazing thing ever. I have a normal weekend and Labor Day off on Monday and then I’m just lucky enough that my regular week day off is on Tuesday. The even better news is that I have very little to do this weekend which means a lot of relaxation, cleaning, and time spent with my wonderful fiancĂ©e.

Eek! That makes me nervous!

2. Tonight is the first UConn football game of the season! We have had season tickets pretty much forever and I am excited to get back into tailgating and I’m really hoping that our team is much better this year than last year. The weather is supposed to be amazing tonight so it will be great to be outside enjoying everything.

I can't wait for this!

3. This week’s meals have been all homemade and absolutely delicious. In an honest attempt to save money, I actually stuck to my meal plan for the week and we ate every meal at home. The highlight of the week was definitely Wednesday night when we made Peanut Butter Fingers’ BBQ Turkey meatloaf which was so yummy and also very filling.

I will put anything in a baked potato skin. This was an egg in one half and Amy's veggie chili in the other.

Meatloaf never looks pretty and I should have paired it with something other than blah cauliflower. But it was delish!

4. I also stuck to my plan of working out every single day as well. We have Natasha and Brian’s wedding coming up next weekend and I have been really trying my best to stick to a workout plan of getting in cardio and strength training at least 4 days a week. I’m taking today off because I’m very sore but I’m planning on dragging Dan out for a hike tomorrow morning (shh) since we haven’t gone on any this summer.

5. Speaking of Brian and Natasha’s wedding, I need to get a dress ASAP! I think that I’m going to try to get over to the mall on Saturday evening or Sunday afternoon to find the perfect dress. Now that there is a Windsor in our mall (aka my favorite ever), I’m hoping it will be a one and done and I will be able to find a dress there.

Alrighty, time to get ready for work! I hope everyone has a safe and fun Labor Day weekend!
