WIAW: Definition of Summer

Happy Wednesday! I feel like I say that at the beginning of every post but a day when I have some time to blog is a happy day 🙂 Today I’m sharing a smorgasbord of different meals and drinks that I have enjoyed so far this summer. Between our fantastic CSA (which I plan to cover in a future post) and farmers market trips, we have definitely been embracing summer foods.

This past Friday we had Brian and Natasha over for dinner. We enjoyed fresh salsa from Fairweather Acres along with homemade guac and some cheese and crackers. I love me some apps!

Dan had a prior commitment on Monday night so I was on my own for dinner. I made Brittany’s buffalo chicken wrap along with a salad consisting of tomatoes, cucumbers, fresh mozz, and basil.

Dan had another meeting last night so I made myself a burrito bowl with quinoa, chicken, black beans, corn, avocado, green onion, salsa, and plain greek yogurt. It was delish!

Man that was a lot of pictures! Believe it or not, even with all of the fun we had, we were still able to get a LOT done on the house. I will be sharing those pictures hopefully later this week if not next week. Labor Day Weekend Recap

I am SO happy it’s already Wednesday! Today is one of my three days of work this week, due to having a four day weekend and then I have this coming Saturday off for Natasha and Brian’s wedding (YAY!!). This Labor Day weekend was truly one of the best and I spent so much fabulous time with Dan and our friends.

Friday night:

I left work early as planned and met up with Dan and my family to tailgate for the UConn vs. BYU game. We ordered pizza (and a salad for me) from Giovanni’s and it was so much fun to just hang out and relax. I definitely enjoyed some wine before and during the game (it was a terrible game) and we bounced around between our seats and visiting with my family and with Dan’s dad who was also in attendance. We left the game a little early and headed to the Diamond where more fun times were had 🙂

Saturday:

I made plans earlier in the week to go to a vineyard with Dan and Carlee (one of my bridesmaids and oldest friends). We decided on Bishop’s Orchard Winery in Guilford, CT which Dan and I had previously sampled wine from at the CT Wine Fest. It was about an hour long drive but it was our first mini road-trip in our new (used) Ford Explorer so we were excited to go. The wine was terrific and it was interesting to learn that none of their wines are made with grapes but rather other fruits like apples, pears, peaches, raspberries, etc. My favorite was the Apple Raspberry Blush, of which I obviously took a bottle of home for our collection.

Saturday evening:

Saturday night was Brian’s stag and all of the guys were attending so we decided to have a girls night. Natasha, Alex, Melissa, Jenna, Isabel, her son Levi, and I all went to Bricco Trattoria for dinner. It was so delicious and also great to have a night out with the ladies. After dinner, we hung out at my apartment and watched some TV and enjoyed quite a bit of wine (thanks Denise!).

Sunday:

We didn’t really do too much on Sunday but I did finally get a dress for Brian and Natasha’s wedding. I’m going to keep it a surprise for now but I will definitely share pics from the wedding after this weekend. We also had a delicious lobster dinner complete with baked potatoes, stuffed clams, and corn on the cob at Dan’s parents house (boy are we spoiled!).

Monday:

I woke up on Monday ready for a good workout since I had two rest days in a row. I did a quick kickboxing workout on the Xbox and then convinced Dan to finally go for that hike I’ve been thinking about forever. We completed a little over two miles and then we decided to hit up Dondero Orchards in South Glastonbury to do some blueberry picking. They were serving blueberry fritters which neither of us had tried before so we obviously got those also. They were AMAZING. We came home to shower and prepared dinner as we had two of our favorite people, Erica and Jon, coming over for dinner. We made homemade burrito bowls (similar to Chipotle/Moes style) filled to the brim with so many toppings. They were a big hit and Dan keeps asking why we haven’t made them sooner. Dan used the blueberries that we had picked earlier in the day and made a delicious blueberry crisp. It was a perfect dinner 🙂

I had yesterday off too and I did absolutely nothing but run a few errands and relax so nothing too interesting there. I hope everyone has a great week!

Marvelous Monday!

I would say that this past weekend flew by as it usually does but this one actually didn’t fly by. I made an honest effort to enjoy every single moment so that everything didn’t seem like such a blur. When I sit down to write these posts, I find that some weekends have been filled with so much stuff that I didn’t take much time to sit back and enjoy and think about how lucky I am to make such great memories. This weekend was definitely filled with SO many great memories.

Marvelous is… the 2nd Annual Patrick Crovo Memorial golf tournament. I didn’t golf but I was able to stop by for a couple of hours in the late morning/early afternoon to spend time with my family and to watch Dan, his dad, his brother Jay, and our friend Jon golf a few holes. It was a great time and although I wasn’t able to attend the lunch afterwards, Dan told me it was filled with laughs and fun with my family.

Marvelous is… Natasha’s bachelorette celebration on Saturday! I had been looking forward to her celebration for a long time and it was truly a special day. We started the day off at Priam Vineyard in Colchester and enjoyed a wine tasting along with some wine outside and a ton of delicious snacks. It was a gorgeous day and it was so nice to be able to sit back and relax. We met up after the vineyard at Barcelona Wine Bar in West Hartford for dinner and this experience was unreal. We had a private table up in the balcony and everything from the atmosphere to the food and especially the people was absolutely amazing. I am going to write a full post about the meal on Wednesday because it was definitely a top five meal in my book and I can’t wait to share it with you guys! It was a wonderful day and I am SO lucky that I was able to attend and enjoy that time with Natasha.

Marvelous is… a terrific Sunday Funday with Dan! I felt as though I had barely seen him all weekend due to being very busy so we set aside the entire day on Sunday to spend time together. We went out for a yummy sushi lunch at Sakura Garden and followed that up with a long motorcycle ride which was perfect on such a hot day. Dinner ended up being lobster, steamers, and scallops brought in from Maine by our friend Kevin’s cousin Tucker who has a lobster boat. I felt completely spoiled by the delicious food we enjoyed yesterday (no we don’t normally eat that well!). We ended the night with a 30 minute walk so I could get some sort of exercise in this weekend.

Trade It Up Tuesday!: Weekend Recap

I apologize for not posting yesterday but after one of the busiest weekends ever, I just couldn’t find the time to post. Plus I figured that I have never done a “Trade It Up Tuesday” post before so I felt that recapping the weekend with one of those would be perfect.

I would not trade… the amazing birthday party that I had on Thursday night! It was truly so wonderful to be surrounded by ALL of my friends and Dan’s parents (and my Dad even made an appearance!). The night was full of great food and laughs and silly drunken antics (of course). Dan’s parents were so generous to let me have the party there and they even provided the burgers and hot dogs also. I got so many great gifts including many many bottles of wine (YAY!). I wish I could relive that night again and then I am reminded that our wedding is my chance to do that and I am SO excited for that!

I would trade… not getting in any workouts since Wednesday. To be completely honest, I kind of knew in the back of my head that I wouldn’t have time to work out. I also found that I didn’t really want to work out either. I really wanted to make the most of the extra time I had to spend with Dan and our friends. However, I still am kind of disappointed in myself that I didn’t put forth more of an effort to get some exercise. The only thing I can really say is that next time I have a long weekend, I plan on trying a little bit harder to squeeze in some exercise, even if it doesn’t involve going to the gym.

I would not trade… all of the yummy food I enjoyed this weekend! In addition to all of the yumminess at my party, we also enjoyed a 4th of July lunch at Red Robin (birthday burger!), dinner at Chowder Pot (lobster time!), and a Sunday dinner at Vito’s after the beach. I’m going to refrain from elaborating on our less than stellar experience at Windjammer’s in Rhode Island on Sunday because the service was really poor and the portions were very small for the prices we paid. It was honestly my dream come true weekend food-wise as I don’t think I have ever enjoyed that many favorite foods at once.

I would not trade… a fantastic Saturday cookout at Dan’s uncle’s house in Massachusetts. The house was gorgeous and it was a perfect day to spend outside. I loved bonding with my future family and there were many Cosmo’s (and then laughs) enjoyed. After the cookout we picked up Alex and headed to the Harrington’s house for a cookout which was so nice 🙂 We ended the night with the Manchester fireworks which were awesome just as they are every year.

I would not trade… a fabulous beach day on Sunday with Dan, Alex, Kevin, Robbie, and Melissa. It was a beautiful day and I’m so glad Melissa was able to meet up with us for some sun and lunch. We also ran into our friends Kaitlin and Quentin and we all took a nap in the sun right outside of their beach house after lunch. All in all, it was the perfect end to one of the best weekends I have ever had. I am so lucky to have such great people in my life who make every single day seem better than the last.
