Why I Decided to Roast a Chicken & Other Weekend Stuff

Happy Monday! This weekend went by way too fast. Does anyone else agree? Even though it flew by, I feel like we got so much done which is great and it is always good to start off the week feeling like I’m ahead.

Friday… started with a tough bootcamp at Mission followed by an incredible avocado, egg white & spinach breakfast sandwich from Panera. I was really craving avocado and this was exactly what I was looking for!

Friday night… we had a delicious dinner at Bears with Robbie and Jenna followed by drinks to celebrate St. Patty’s Day. It was a fun night out and I’m glad we were able to spend some quality time with them 🙂

Saturday… we ran some errands during the morning and early afternoon including a vet visit for Charlie which was not a good experience at all and we will be changing vets ASAP.

Saturday night… my beloved East Hartford Hornets were playing in the state championship for basketball at Mohegan Sun so we decided to make a night of it. We had dinner at Chick-fil-a (don’t judge, it was SO delicious) and drinks along with a bit of gambling before the game. We ended up losing the game but it was so exciting to see my favorite team play in the championship and I’m so proud of them and the huge outpouring of support from our town.

Sunday… I planned on getting up for bootcamp but we didn’t get to bed until almost 1:00am the night before so an early morning was not in the cards for me. I slept in a little bit and ended up going to Cardio Express to run on the treadmill. I completed four miles of jogging/walking which I don’t think I’ve ever done before and I’m feeling it this morning!

Sunday afternoon… I had the urge to make a big Sunday dinner that would provide leftovers for lunch for the week. I scoured the ads and found that whole chickens were on sale and decided to roast one using Ina Garten’s famous recipe. I had never actually roasted a whole chicken before so I was a bit intimidated but the recipe was SO easy and it was nice to spend a few hours cooking in the kitchen while Dan napped (he was up at 5:00am for drill after our late night). I also made this triple chocolate banana bread which was SO good and I honestly can’t stand regular banana bread so I was happy with this chocolately version.

Sunday night… we devoured the chicken with a side of mashed cauliflower and the veggies that I cooked with the chicken along with a bottle of Chardonnay which paired so well with the chicken. We stayed up a little too late watching March Madness so I’m quite tired today but nothing that a cup (or two) of coffee can’t fix.

Marvelous Monday

I hope everyone had a great weekend! Mine definitely flew by but that is because it was filled with so many marvelous things!

Marvelous is… a Friday night sushi dinner at Min Ghung! Dan, Alex, and I decided we were all craving sushi so we picked Min Ghung which has always been a favorite sushi spot of mine in Glastonbury. We each ordered three fabulous rolls and my favorite was actual the most basic one I ordered, the Spicy Scallop roll. It was so flavorful and it was something I had never tried before. It was great to catch up on the previous weeks events with a quiet dinner before we all went out to the noisy bar for drinks.

Marvelous is… the St. Patrick’s Day parade on Saturday! It was my first time there and let me tell you, it was quite an experience. There were so many people expected to go that we parked in East Hartford and walked across the bridge and went straight to Black Eyed Sally’s for our first beer of the day. We found a great spot right there and watched the parade. There were so many interesting drunk people to watch (I mean it is St. Patty’s Day) and I can’t wait to go again next year.

Marvelous is… a Sunday visit to two local vineyards followed by a St. Patrick’s Day feast at Dan’s grandparents house. We planned to finish up the Connecticut Winter Wine Trail with our awesome friends Brian and Natasha by going to Jerram Winery in  New Hartford, CT. The wine at Jerram was delicious and we were having so much fun that we spontaneously decided to visit another nearby winery recommended to us by a mutual friend called Connecticut Valley Winery. The wines at CT Valley were the best that any of us has EVER had. There was seriously not a single bad wine on that list. That made it so hard to decide which wines to buy but I am SO glad we decided to go there and I know we will be making a trip back there this summer to enjoy some more wine. The location was also beautiful and it would be a perfect place to sit outside on a summer day and have a picnic with some of their wine. On the way back from the vineyard, Brian and Natasha dropped us off at Dan’s grandparents house in Avon, CT where we enjoyed a delicious meal of corned beef cabbage, roasted potatoes, cole slaw, and pineapple with Dan’s grandparents, parents, sister, brother-in-law, and niece. It was such a perfect way to end an amazing weekend!

Five (Random) Things Friday

TGIF! I am SO happy it is finally Friday! I figured I would hit you guys with five random things so here goes nothing.

  • I won the Color Me Rad giveaway from For Love of Carrots. YAY! I have never run a 5k before and I’m so excited that this will be my first one. I signed Dan up to run it with me (happy early bday to him ha) and a few other friends are running it so it should be a lot of fun. I’m a little bit nervous about how slow I’m going to be since I haven’t run since the end of fall but I have some time to prepare since the race is on April 26th. Hopefully the weather warms up a little bit before then so I can actually run outside to prepare. Fingers crossed!

  • I’m attending a Tastefully Simple party at Natasha’s house tomorrow night. This should be fun since everyone has been hosting Lia Sophia parties lately and this will be a nice change from that. Plus, I love food (duh) and I am definitely planning on spending a lot of money and getting some new recipes!
  • I went to Rooftop 120 last night for dinner with one of my best (and oldest) friends Carlee to celebrate her new job! I will be doing a full review of the meal in a later post since there is a lot to report but it was so delicious. It was even better to be able to catch up with her and just have some genuine girl time to vent about things and also discuss my wedding plans. She has several friends who are currently engaged so she has lots of helpful tips for me whenever I see her. Good food and even better company is always a perfect night for me!

  • In celebration of St. Patrick’s Day this coming Monday, Dan and I will be attending a “Kegs and Eggs” party tomorrow morning at our friend Sarah’s house. We are making mashed potatoes in the crock pot and I know Sarah is cooking up some tasty corned beef so it should be a great time! I’m not sure how I feel about drinking first thing in the morning (especially since we are going out tonight too) but I’m sure it will be fun. We also plan on going to the Hartford St. Patrick’s Day parade after which I have never attended so I’m SO pumped for that. I love parades and it should be very interesting to see those who will have been drinking since the wee hours of the morning.
  • I just ordered the tickets today (pay day $$$) for the Rascal Flatts concert on May 31st. We are big country music fans and this was such a fun concert to attend last year. Tailgating is one of my favorite activities and since a huge group of our friends are going, it will definitely be a great day! I just hope it won’t have rained the entire week leading up to the concert because the hill was insanely muddy last year and drunkenly trying to navigate through that mud was not a fun time.
