Five Things Friday: Summer Lovin’

Happy happy Friday! I feel like this week dragged on a bit but that might be because we have very few plans this weekend and I’m so pumped to just relax with the hubby! It was definitely a busy week and I have a huge piled of unfolded laundry calling my name this evening (ugh). I figured I would share five random thoughts from the past week (or two).

  • We signed up for our first CSA with Fair Weather Acres farm and our first pickup was this past Sunday. We received so many fresh and delicious veggies which allowed us to be a bit more creative with our cooking this week. Our box included: 2 lbs of spinach, 1 head of lettuce, 1 quart of strawberries, 1 bunch of swiss chard, 1 bunch of radishes, 1 head of broccoli, garlic scapes, and bok choy. I loved everything included but I think my favorite were the strawberries and the garlic scapes. We made two new recipes with some of the veggies we received, a garlic scape and spinach frittata as well as swiss chard and garlic scape pasta. Both were yummy!

  • My cousin Daniel graduated from high school on Tuesday and we were fortunate enough to be able to attend. He gave a speech during the ceremony which obviously had everyone in our family in tears. We went out for a wonderful dinner at Bertucci’s after too. It was a great evening!

  • Last Saturday went down as one of the top five days of this year for me so far. Natasha, Jenna, and I attended our friend Miko’s bridal shower which was SO much fun. We were nonstop laughing the entire time due to the very creative and hilarious games that her bridal party had planned. After the shower, Jenna and I met up with the boys in Granby at Lost Acres Vineyard where we enjoyed some wine and a fantastic cheese plate. After that we ventured over to Brignole Vineyards, also in Granby, and had a really fun wine tasting (the guy giving our tasting was hilarious) and some fabulous sangria. All of that wine meant for an early evening catnap but we managed to rally and make it out for our friend Kevin’s birthday. It was truly an amazing day!

  • Salads have been my jam lately. Ever since returning from our cruise, I have been craving salads and fresh veggies ALL the time. I have particularly been enjoying my current lunch salad which includes strawberries and goat cheese which is such a fantastic combo. If you haven’t tried it, you should!

  • Father’s Day was filled with so much delicious food and lots of sunshine. We treated my Dad to lobster rolls at Jessica’s Garden in Marlborough (highly recommend!) and then we visited Dan’s parents for dinner at their new lake house in Ashford. It was a wonderful end to a great weekend!

Life has been pretty great lately but I am excited to have very few plans on the radar this weekend. There is a bottle of Rosé and some grilling on the agenda and that’s the way I like my summer weekends!

Five Things Friday: Can’t Beat it? Join It!

Happy Friday y’all! I hope everyone had a wonderful week, or at least better than mine! Not that it was all that bad and I really have nothing to complain about but yesterday was just awful, including the fact that I spent a total of 2.5 hours in traffic to and from work. But putting my complaints aside, I’m here to share a few random thoughts with you guys.

1. I couldn’t beat the heat, so I joined it! The title of this post is appropriately named because even though it has been very hot and humid the past week or so, I decided that it was a good idea last Thursday evening to take a Bikram yoga class. I felt like I needed a little detox before the weekend and I definitely sweated everything out! It was the most uncomfortable I have felt in a class since my very first one about two years ago. I am glad I finished it and I did feel better once I cooled down a bit.

2. French fries are my current food obsession. I have been enjoying my fair share of them during the past week including an amazing serving of poutine at the Connecticut Wine Festival this past Saturday and some Red Robin fries which we enjoyed at home the other night with our BLTA sandwiches. I think I have been loving them so much because the heat always makes me want carbs like crazy but luckily my workouts have been excellent this week so I’m not feeling too guilty about the carb overload.

3. This weekend is filled with all of the birthday celebrations! I’m SO looking forward to finally getting to see Alex after she has been away a bunch this summer and celebrate her birthday which was this past Monday. On Sunday we are celebrating another good friend’s birthday in Massachusetts which should be so much fun as I’m loving little day trips right now.

4. Who else was completed thrilled that Kaitlin picked Shawn on The Bachelorette? I definitely feel like she picked the guy with whom she had the best overall connection. I think they are the cutest couple and I’m enjoying following her on SnapChat and their adorable Instagram photos too.

5. I can’t believe tomorrow is August 1st! I know I’m reiterating what everyone else has been saying but this summer is flying by and our wedding is rapidly approaching. We have a lot to do and very little time to do it so I can’t promise you guys that I will be blogging a ton but I will try my best to post at least once a week.

Things I’m Loving Lately # 3

Happy Wednesday guys! I have been feeling under the weather lately with a pretty nasty cough so I wasn’t up for much more than laying on the couch. I’m feeling a little bit better today and wanted to share a few things that I have been really loving as of late.

  • Time spent with delightful friends (paired with some wine and the shining sun)

This past Saturday we had plans with Brian and Natasha to visit Cassidy Hill Vineyard. We all did a wine tasting and then bought a couple of bottles to enjoy outside in the most beautiful weather that we have had yet this year. We also brought a large assortment of appetizers ranging from several different types of cheeses to Natasha’s caprese salad and melon wrapped in prosciutto (freaking amazing). It was a relaxing and fun day that was much needed.

I bought these on a complete whim while grocery shopping this past Sunday. I finally had one for dessert last night and it was surprisingly delicious. I didn’t expect that a candy bar which was only 130 calories would be so tasty but it was very yummy. It also did not give me that heavy feeling that eating a regular candy bar usually does, as the truffle filling was very light, almost like a mousse.

This video is another winner! I bought a couple more of her videos on Amazon last week and this was the first one that I tried. It was similar to the 30 Day Shred in that it involved the 3-2-1 system (3 minutes strength, 2 minutes cardio, 1 minute abs) and it didn’t take up a lot of my time. It was a great workout and will definitely come in handy now that softball season is starting and I won’t have as much time to devote to exercise.

  • Spring and summer clothes

I have been going crazy lately buying all kinds of new clothes for spring and summer. Looking ahead, I know that I’m going to need a ton of cute tops and dresses for the fun activities I have planned for the summer (particularly all of the wedding-related things). I picked up this dress from Old Navy in three different colors/prints since it was on sale for $12 on Saturday (and I had a gift card), as well as this cute jean jacket, this top, and also this top.  I have also been getting a lot of very inexpensive tops from Consignment Originals, which is where my girl Jenna works 🙂

Labor Day Weekend Recap

I am SO happy it’s already Wednesday! Today is one of my three days of work this week, due to having a four day weekend and then I have this coming Saturday off for Natasha and Brian’s wedding (YAY!!). This Labor Day weekend was truly one of the best and I spent so much fabulous time with Dan and our friends.

Friday night:

I left work early as planned and met up with Dan and my family to tailgate for the UConn vs. BYU game. We ordered pizza (and a salad for me) from Giovanni’s and it was so much fun to just hang out and relax. I definitely enjoyed some wine before and during the game (it was a terrible game) and we bounced around between our seats and visiting with my family and with Dan’s dad who was also in attendance. We left the game a little early and headed to the Diamond where more fun times were had 🙂

Saturday:

I made plans earlier in the week to go to a vineyard with Dan and Carlee (one of my bridesmaids and oldest friends). We decided on Bishop’s Orchard Winery in Guilford, CT which Dan and I had previously sampled wine from at the CT Wine Fest. It was about an hour long drive but it was our first mini road-trip in our new (used) Ford Explorer so we were excited to go. The wine was terrific and it was interesting to learn that none of their wines are made with grapes but rather other fruits like apples, pears, peaches, raspberries, etc. My favorite was the Apple Raspberry Blush, of which I obviously took a bottle of home for our collection.

Saturday evening:

Saturday night was Brian’s stag and all of the guys were attending so we decided to have a girls night. Natasha, Alex, Melissa, Jenna, Isabel, her son Levi, and I all went to Bricco Trattoria for dinner. It was so delicious and also great to have a night out with the ladies. After dinner, we hung out at my apartment and watched some TV and enjoyed quite a bit of wine (thanks Denise!).

Sunday:

We didn’t really do too much on Sunday but I did finally get a dress for Brian and Natasha’s wedding. I’m going to keep it a surprise for now but I will definitely share pics from the wedding after this weekend. We also had a delicious lobster dinner complete with baked potatoes, stuffed clams, and corn on the cob at Dan’s parents house (boy are we spoiled!).

Monday:

I woke up on Monday ready for a good workout since I had two rest days in a row. I did a quick kickboxing workout on the Xbox and then convinced Dan to finally go for that hike I’ve been thinking about forever. We completed a little over two miles and then we decided to hit up Dondero Orchards in South Glastonbury to do some blueberry picking. They were serving blueberry fritters which neither of us had tried before so we obviously got those also. They were AMAZING. We came home to shower and prepared dinner as we had two of our favorite people, Erica and Jon, coming over for dinner. We made homemade burrito bowls (similar to Chipotle/Moes style) filled to the brim with so many toppings. They were a big hit and Dan keeps asking why we haven’t made them sooner. Dan used the blueberries that we had picked earlier in the day and made a delicious blueberry crisp. It was a perfect dinner 🙂

I had yesterday off too and I did absolutely nothing but run a few errands and relax so nothing too interesting there. I hope everyone has a great week!
