Random Thoughts, Weekend Recap & House Update!

Happy Monday! This past weekend flew by way too quickly as I was away for the majority of the weekend which was incredible. Today I’m sharing a few random thoughts, some moments from this past weekend, and a house update.

  • Since we were in the process of completing some kitchen renovations this weekend, we decided it would be a good idea to go out for sushi on Friday evening with some friends. I felt like we hadn’t had sushi in forever and it definitely hit the spot.

  • I was so lucky to be able to spend the majority of Saturday and Sunday in Rhode Island at the beach for Melissa’s birthday. It was so relaxing and there was endless amounts of laughter and fun. We were also treated to an incredible dinner of all different kinds of grilled pizza & margaritas for dinner on Saturday evening. It was such a special weekend.

  • I had my first Acai bowl from Liquid Nirvana for breakfast on Friday and I’m officially hooked! It was so refreshing after a pretty intense boot camp workout. It is definitely something I can replicate easily at home but it was Friday and our kitchen was a disaster zone so there you have it.

  • Operation New Kitchen Floor is officially complete! While I was away, Dan, my aunt’s fiancee Jorge, my Dad, and my cousin Daniel all worked around the clock and put down our new tile floor in the kitchen. It looks absolutely amazing and makes such a big difference.

  • This week will be a short work week for me as we have a wedding Friday afternoon/evening. It should be a blast and I splurged and ordered a Rent the Runway dress to be delivered so I have something new and fancy to wear. I will be sure to share some pics with you guys next week.

Summer Fun: The Shoppes at Farmington Valley

There has been no shortage of fun activities going on this summer and one thing I love is visiting a new-to-us place and being able to experience something different. We were able to do just that a few weeks ago at The Shoppes at Farmington Valley in Canton, CT. The always wonderful Kat from Bird Social Media invited us to eat and shop the night away!

We started the evening off at Feng Asian Bistro where we enjoyed several unique dishes, from tuna wontons to scallops that just melted in your mouth. We also enjoyed some cocktails and my personal favorite was definitely the white sangria which was most refreshing on that warm summer evening.

Once we were stuffed to the brim with food and drinks, we headed out to do some shopping! We visited Loft, J.Crew, Olive A Little, and Simply Mac. My favorite was definitely Olive A Little as that is actually where we regularly buy our olive oil and vinegar, at their South Windsor location. They gave us an incredible swag bag filled with so many different kinds of olive oil, vinegar, cheese, and pasta.

I ended up purchasing an adorable open back top from Loft as well as a pretty statement necklace from J.Crew. Both stores were having such great deals that I had to treat myself!

The Shoppes at Farmington Valley are located at 110 Albany Turnpike in Canton, Connecticut, right on Route 44. There are over 40 shops and businesses to visit, including a Kohls and a Dick’s Sporting Goods. I can’t wait until we are able to visit again and do some more eating and shopping!

Quick Little Catch Up

Happy Wednesday everyone! There has been quite a bit going on, as per usual so I’m going to keep today’s post short and sweet. It’s just a little bit of catching up on this past weekend and the start of the week as well. As busy as we are, we are lucky to have such great parties and events to attend so I’m not complaining at all!

Friday evening turned out to be a little bit stressful and a nice dinner with Dan and Melissa was just the cure for that. We went to a new-to-us Japanese restaurant in Wethersfield called Edoichi Sushi & Hibachi Steak House. We enjoyed a yummy scorpion bowl and some amazing sushi which was some of the best I had ever had! It was a nice, relaxing evening which was much needed.

Alex’s birthday party was Saturday evening and as always, her party was filled with great food, delicious drinks, and so much fun with some of our best friends. I didn’t really take any pictures because I was really immersing myself in the night and I will take that as a win!

Sunday was spent celebrating our good friend Dan’s birthday. We all carpooled and headed up to the Seekonk Speedway in Seekonk, Massachusetts for a Thrill Show which included a variety of different races, demolition derbies, and even some monster trucks. Since we always enjoy the demolition derby at the Hebron Fair, this was a lot of fun and on a much bigger scale than we are used to. We came home exhausted that night but it was well worth it!

I ended up working from home yesterday since we had a meeting with our Reverend early in the evening to finalize some wedding details. I took the opportunity of working from home and made myself a delicious lunch that I normally would not have had time to make on a normal day. I used my new Nutribullet and blended up some spinach, peach slices, apple slices, cucumber, and raspberries for an amazing smoothie and paired it with the rest of the apple and peach slices for a healthy and surprisingly filling lunch. I also took the time to prepare dinner ahead of time, which was Skinnytaste’s Santa Fe Chicken. It was SO easy and I just basically dumped all of the ingredients into the crock pot and cooked on low for 10 hours. We used the results to make chicken tacos as a celebration of Taco Tuesday! It was so delicious and I will definitely be making it again.

Five Things Friday: Crazed

Happy FriYAY guys! I was pretty crazed this week due to the fact that it was my first full week out of training at my new job and although it went VERY well, I was pretty stressed so when I got home most evenings, I just really didn’t feel like writing. I spent most evenings working out and then vegging out on the couch with my DVR and a glass of wine. That being said, I have a few random things to share with you guys.

1. We have enjoyed some fabulous meals this past week. I have to say that my new hours really make it a lot easier to make dinner together and eat at a normal time. Sunday night, we made a quick trip to Whole Foods and picked up some yummy shrimp cocktail and cheese and crackers to enjoy while watching the Oscars. Tuesday evening I was way too tired to even think about dinner so we enjoyed an impromptu date night at Aroy Aroy which is a new-to-us Japanese/Thai restaurant in South Glastonbury. The food was a little pricey but it definitely hit the spot. Last night we had one of my favorites, BLTs with added avocado and an absurd amount of sweet potato fries on the side. I swear I could eat that meal every single night, it was so yummy!

2. I have finally decided to try out Stitchfix and I am very excited. I have been reading so many other blogs and have seen so many success stories with it that I decided that I had to try it for myself. Plus, I’m in need of some new spring clothes and haven’t really been in the mood to shop lately so this seems like the perfect solution! For those who are wondering exactly what Stitchfix is; it’s a styling service in which you fill out a style profile on their website, pay a $20 styling fee and then your styling profile is assigned to a personal stylist who creates a fashion “fix” of five items that are sent to you in the mail based on what you have indicated in your profile. Mine is scheduled to arrive on March 5th so I will definitely be posting about my first experience!

3. We are starting (and hopefully finishing) our save-the-dates this weekend. Finding all of the addresses has been my biggest source of anxiety in the wedding planning process thus far and I will be breathing a huge sigh of relief once we get these things out in the mail. We are also hopefully going to add more items to our registry this weekend too which would be another check off the list. Shout out to my maid of honor Alex and bridesmaid Natasha for picking their gorgeous dresses this past weekend so that is another important thing that is all done which is great.

4. Jillian Michaels is becoming my new best friend. Although I don’t necessarily agree with her methods on The Biggest Loser, I am absolutely without a doubt loving her workout videos. There are so many to choose from which makes it impossible for me to be bored and I feel like I’m working so many different muscles each day. My favorites right now are the 30 Day Shred, Kickboxing Fastfix, and the newer-to-me Trouble Zones. Basically this means that I love all of the ones which incorporate weights into the workout because I feel that those are what is changing my body the fastest. I am honestly loving the strength I have been feeling within my core and just throughout my body as a whole. I still feel like I have a lot of work to do but these videos are definitely helping me to get where I want to be.

5. My goal of trying out one new recipe each week has been quite successful. This past Sunday I had Pinch of Yum’s Crockpot Queso Chicken Chili cooking all day long and let me tell you, it was amazing. The leftovers the next night were perfect to scoop up with some wheat thins and tortilla chips would have been even better. I’m not sure I’m making anything new this coming week but every single evening is pretty busy so I don’t think I will have much time to cook.

Marvelous Monday!

I would say that this past weekend flew by as it usually does but this one actually didn’t fly by. I made an honest effort to enjoy every single moment so that everything didn’t seem like such a blur. When I sit down to write these posts, I find that some weekends have been filled with so much stuff that I didn’t take much time to sit back and enjoy and think about how lucky I am to make such great memories. This weekend was definitely filled with SO many great memories.

Marvelous is… the 2nd Annual Patrick Crovo Memorial golf tournament. I didn’t golf but I was able to stop by for a couple of hours in the late morning/early afternoon to spend time with my family and to watch Dan, his dad, his brother Jay, and our friend Jon golf a few holes. It was a great time and although I wasn’t able to attend the lunch afterwards, Dan told me it was filled with laughs and fun with my family.

Marvelous is… Natasha’s bachelorette celebration on Saturday! I had been looking forward to her celebration for a long time and it was truly a special day. We started the day off at Priam Vineyard in Colchester and enjoyed a wine tasting along with some wine outside and a ton of delicious snacks. It was a gorgeous day and it was so nice to be able to sit back and relax. We met up after the vineyard at Barcelona Wine Bar in West Hartford for dinner and this experience was unreal. We had a private table up in the balcony and everything from the atmosphere to the food and especially the people was absolutely amazing. I am going to write a full post about the meal on Wednesday because it was definitely a top five meal in my book and I can’t wait to share it with you guys! It was a wonderful day and I am SO lucky that I was able to attend and enjoy that time with Natasha.

Marvelous is… a terrific Sunday Funday with Dan! I felt as though I had barely seen him all weekend due to being very busy so we set aside the entire day on Sunday to spend time together. We went out for a yummy sushi lunch at Sakura Garden and followed that up with a long motorcycle ride which was perfect on such a hot day. Dinner ended up being lobster, steamers, and scallops brought in from Maine by our friend Kevin’s cousin Tucker who has a lobster boat. I felt completely spoiled by the delicious food we enjoyed yesterday (no we don’t normally eat that well!). We ended the night with a 30 minute walk so I could get some sort of exercise in this weekend.

Marvelous Monday

I hope everyone had a great weekend! Mine definitely flew by but that is because it was filled with so many marvelous things!

Marvelous is… a Friday night sushi dinner at Min Ghung! Dan, Alex, and I decided we were all craving sushi so we picked Min Ghung which has always been a favorite sushi spot of mine in Glastonbury. We each ordered three fabulous rolls and my favorite was actual the most basic one I ordered, the Spicy Scallop roll. It was so flavorful and it was something I had never tried before. It was great to catch up on the previous weeks events with a quiet dinner before we all went out to the noisy bar for drinks.

Marvelous is… the St. Patrick’s Day parade on Saturday! It was my first time there and let me tell you, it was quite an experience. There were so many people expected to go that we parked in East Hartford and walked across the bridge and went straight to Black Eyed Sally’s for our first beer of the day. We found a great spot right there and watched the parade. There were so many interesting drunk people to watch (I mean it is St. Patty’s Day) and I can’t wait to go again next year.

Marvelous is… a Sunday visit to two local vineyards followed by a St. Patrick’s Day feast at Dan’s grandparents house. We planned to finish up the Connecticut Winter Wine Trail with our awesome friends Brian and Natasha by going to Jerram Winery in  New Hartford, CT. The wine at Jerram was delicious and we were having so much fun that we spontaneously decided to visit another nearby winery recommended to us by a mutual friend called Connecticut Valley Winery. The wines at CT Valley were the best that any of us has EVER had. There was seriously not a single bad wine on that list. That made it so hard to decide which wines to buy but I am SO glad we decided to go there and I know we will be making a trip back there this summer to enjoy some more wine. The location was also beautiful and it would be a perfect place to sit outside on a summer day and have a picnic with some of their wine. On the way back from the vineyard, Brian and Natasha dropped us off at Dan’s grandparents house in Avon, CT where we enjoyed a delicious meal of corned beef cabbage, roasted potatoes, cole slaw, and pineapple with Dan’s grandparents, parents, sister, brother-in-law, and niece. It was such a perfect way to end an amazing weekend!
